As well as a Degree in Tourism and Hospitality, Spero has over 16 years’ experience in restaurant opening, running and operational management in the hospitality industry. Starting his career in London, he successfully oversaw new openings of the famous Paternoster Chop House. From here he became Operations Manager with Galvin Restaurants and managed the launch of the Michelin Starred, Galvin La Chapelle and award winning eateries Café Au Vin & Galvin Bistrot Deluxe. He then moved to be the Food and Beverage Operations Manager for Starwood Hotels and Resorts, where he managed twenty two 5* food and beverage outlets, recording year on year profit and launching 4 successful concept restaurants. After his time in London he moved to Dubai to work at world-famous Japanese fusion restaurant, Zuma as General Manager. During his time at Zuma his success was recognised with awards from Conde Nast, BBC Good Food and Who's Who. With a strong history of successful restaurant management, Spero is the COO of PS Bars.
