The food & beverage experience on board a cruise liner must rival that of any hotel fine dining offering while overcoming a unique and complex set of challenges. The recipient of this award must have made a major contribution through innovation in cooking techniques, styles of cuisine and the understanding of culinary processes applied to the cruise industry. The award also recognises a wider contribution to the promotion of the cruise industry as a source of innovation, and as an attractive career choice. The award winner may not be an ever-present figure on-board a ship, however they must play a significant role in the day-to-day operations of their business.
